Songs of the Season

I am obsessed with the iHeart Radion station Songs of the Season and it's so much fun... All my favorite songs in one place like....
This one isn't a fav because it makes me cry...
Anywho... Its been a crazy week at work and with Mike and his work so the dinner situation has been lax. Next week though I will have many more yummy recipes and fun paleo ideas to share. Its Friday and I am ready to be done just finishing up a few things then I am off for a *Special Date tonight!!!

Tomorrow is a busy busy day, an early twirling parade and then practice after that. Its going to be nutzo!!!

Balanced Bites Pod Cast Obsession

If your not listening to this then you NEED TO... I love there Pod casts, Liz and Diane are AWESOME. They are so funny and witty and they have real life conversations and its cool because they make you feel like your right there with them over a cup of coffee discussing life and I LOVE THAT. So down to earth I love it.

They also really explain Paleo in a way that I love. They start off each podcast with some normal girl talk and fun witty conversation and then they get into questions from readers of the blog and they read the questions and answer in detail. They are so informative but in a helpful and fun way. They don't make you feel like a dummy and they really just give you honest answers and they tell you how it is and give advice on what to buy.

First of all  let me start off with this AWESOME quote that I have heard from Diane and it made go OMG that is SOOOO SOOOO True. I was definitely one of these people and when I get in a funk and hate the way things are going I resort back to my old ways. It's totally true though, sometimes its just one of those days when you have a moment and you need to remember why you have made the changes that you have. 

They also went on to discuss pregnancy and food aversion during pregnancy and they discussed how many have food aversions and how one reader who eats paleo had an issue with eating her usual bacon and eggs for breakfast and resorted back to eating crackers for breakfast and leaning on them while they were sick. They then went on to say that most food aversions are more mental than they are real. So they suggested to just power through the food aversion and stick with it and that ironically they would have nausea a lot less than the typical pregnant women out there.

Hmmm. This made me think, I know a few people who have gone through pregnancy and still are and they complained of the same things and I know for sure that it must be difficult to bring yourself to eat Paleo when you’re not feeling it, but reverting back to grains is probably not a good idea.

I plan on being Paleo when pregnant and eating clean thereafter and raising Paleo Kiddies, (Mind you I am not pregnant and not near there yet… Need a ring from my Paleo BF first) But it certainly makes you think.

The Cone of Shame...

Ace cut his foot right by his pad on Sunday on a run with Dan and Meg and so he was in pain on Wednesday and acting strange... I talked to my friend who has worked with a vet for years and she recommended that I bring him in since he was acting strange. Well the doc said that he had an infection in his foot and ordered him a good cleaning, some antibiotics, and "the cone of shame" Tell me you have seen the movie UP
So Ace was funny he didn't really know what to do with the cone so he pretty much stayed put. He hates that thing and so I try not to put it on him unless he really won't stop licking his foot. Its looking much better Today ( Wednesday) so I am hoping he will be back to himself soon.

First Parade in over 15 years

I had not much practice with the team on the parade routine so I had to learn it and drill it on my own from watching on the iPad and I did pretty well...I dropped the baton once but that's because it got stuck on my sweatshirt... I should have practiced with that on....

I did well though... although if you look in the picture above I am pissed that my hand is not on my hip.... Sheesh... But I think I did a good job for my first parade in like 15 years. I was little last time I walked in a parade.

Mike Gets a Great Big THANK YOU  for coming with me and watching me and snapping pictures of me... it was cold and he was alone but he was a trooper... I took this on Wednesday night as proof that Ace will cuddle with Mike. Mike says Ace won't cuddle with him but this proves that he will... Ace loves him so much. They stayed asleep like that for hours and I baked a pie and cleaned a little... I have such an exciting family. Passed out by 9pm...

Rewind and Recap

Thanksgiving was so much fun and I always love to see my mom and my cousins and I def need to get better at seeing my family from NE more often... Plus Mike misses seeing my cousins as well.

I have the best MOMMA EVER! I mentioned how I needed to buy Flannel Sheets because our old house is so cold at night and she bought me these...

Thanks Momma! This was at my college graduation.... Ohhh so long ago...
Anywho Over the weekend I broke our the Christmas decorations. I have a strict rule to wait until after Thanksgiving to decorate for christmas. Each holiday needs there own time and I always leave my pumpkins out until the last minute :) I love Fall the BEST!!!

So we started to decorate the inside and Mike and I put up lights outside and they look great!!!
Thanks to Momma and Poppa Martin for lending us some lights :) we are as bright as a shinning star :)

Friends Giving!


Gobble Gobble Turkey Day!

I bet your wondering what a Paleo Feast looks like? Well here it is a full Paleo meal from beginining to end. I hope everyone has a safe and fun Thanksgiving Day! Let's Go Pats!

First I cut up an onion into quarters, 3 green apples into quarters, 5 or 6 stalks of celery cut up into chunks and a few handfuls of carrots. Also add one stick of Cinnamon and some Thyme and Rosemary. 
Then I cleaned and dried Tom and got him ready for the oven. I also prepared a compound butter by adding some Rosemary, Sage and Thyme to a bowl and mashing it with the butter. I also seasoned him with Salt and Pepper. 
Then I put Tom in his cradle and atop the bed of veggies and massaged the compound butter into the bird. 
I learned a very important lesson, like Make sure your roasting pan fits in your oven. Needless to say Tom got transferred to a cheap pan. Before putting him in the oven I put 2 cups of Chicken Stock into the bottom of the roasting pan and a cup and a half of good Apple Cider Vinegar. I seared Tom in the oven at 450 degrees for 45 minutes uncovered and then I covered him and cooked him at 350 for another 3 hours. I basted Tom every 30 minutes with the juice from the pan. 

Once Tom was done I took him out and drained the veggies and poured the liquid into a saucepot, I whisked in some arrowroot powder and added more chicken stock as needed and just let it cook until it thickened.

The Perfect Pie!

So Tomorrow is the big day, Thanksgiving. I made it through a stressful week at work and I am prepared for the big day to spend with my family.

I am prepared for the big feast because....
- I have made conscious decisions to pick and choose what I am going to eat.
-I am going to drink twice as much water as I am alcoholic beverages
-I am bringing Paleo food to eat and share
-I will work out in the morning, and I will eat a good breakfast

Its good to have a plan, I like plans I think its much easier to get through the day when you have a plan. That being said I am one to break plans and change plans at the drop of the hat. I always feel more productive when I make goals for myself but I am always up for spur of the moment fun.

These guys sure know how to have a FUN Friday night.... Ace's new thing is he is protective of Ace and if anyone goes to touch him he blocks himself. Mike thinks this is cute and I think it's annoying. So that is the next thing on our list to work on.

Onto fun Things... Need a good Pie recipe to take to your dinner try this one!

This is from Make It Paleo, Which by the way is my favorite Paleo Cookbook.

Pumpkin Chiffon Pie
  • 1 1/2 cups almond flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 cup coconut oil
  • 2 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract

  1. Preheat oven to 325.
  2. In a medium sized bowl, combine dry ingredients.
  3. In a small bowl, combine wet ingredients (make sure to melt the coconut oil before mixing it into the batter, about 40 seconds in the microwave does the trick).
  4. Stir wet ingredients into dry.
  5. Pat the dough into a 9.5 inch glass pie dish (this takes a little finesse. I probably took about 10 minutes to smooth out the perfect pie crust. It works very well, you just have to be patient. You want to create an even thin layer, the dough will rise a bit when you bake it.)
  6. Bake for 10-15 minutes, or until golden.
  7. Remove from oven to cool.
 Chiffon Pumpkin Pie
  • 1 tablespoon unflavored Knox Gelatin
  • 16 oz pure pumpkin puree
  • 3 eggs, separated
  • 1/2 cup unsweetened almond milk (we used Almond Breeze)
  • 2/3 cup pure maple syrup
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/2 teaspoon salt
  • Liquid stevia extract
  • 1/2 cup heavy cream (optional for whipped topping)


  1. In a saucepan combine gelatin, maple syrup, salt, cinnamon, nutmeg, ginger, pumpkin, egg yolks, and almond milk. Mix thoroughly.
  2. Cook over medium heat, stirring constantly until it boils.
  3. Remove from heat, and chill until set (once the pan is cool enough, you will want to put the filling in the fridge to cool, but be sure to monitor it).
  4. Beat egg whites until stiff and add in a few drops of liquid stevia to sweeten a bit.
  5. Once pumpkin has cooled and set in the fridge, remove from fridge and fold pumpkin into the whipped egg whites. ("folding" is a stirring technique that adds air into the batter, check out this quick video)
  6. Pour filling into pie crust.
  7. Cover pie with saran wrap and cool in the fridge until set.
  8. An optional topping is to whip heavy cream and sprinkle with cinnamon.

No One Is Perfect!

I love listening to the Balanced Bites Podcasts They are really great and it always shows and helps to make my point. I know SO many people look at what I eat and how I deal with situations and manage to eat clean everyday. I am not perfect and I do have some indulgences and Diane really helped to prove my point and I can't agree more with how she explains it. Thanksgiving is coming up and so yes I can have some non Paleo foods if I am going over to someones house, its not that big of a deal.

  • Never touch a grain, grain-derived food, grain-derived ingredient or even something that ever touched a grain.

 I know that I am not perfect in my work life and when I am stressed or crunched for time I may go and grab a burger, but not just any burger, a REALLY GOOD BURGER from the place that I love. If I choose to eat something not Paleo I push myself to work out or to run or move with the dogs.

They also touched on "cheats" and if you think of cheats as a give and take your going to find yourself falling back into that hole. For me on Thanksgiving I know that  when dessert is served I will be tempted so I will bring a Paleo Treat, so I cheat with a lesser known evil for me.

Busy Day Ahead of Me

So next week at work I have a new boss starting and so will be interesting. So this weekend is jam packed with fun Wedding stuff for Kristin and Mikes Wedding. Finally, the cutest couple ever is getting married so I am super excited for that.

Tonight is going to be busy because....
-Mike needs to return and get new "fitting" shirts
-Mike needs to get a haircut
-I need to change the bedding in the spare room
-Do some laundry
-Go grocery shopping. 
-Tie Mike's Tie (get Paul to come over and tie it for him)

Hey Sexy Ladies...And the Hulk

Ok so I have to say, Last night was a great night. After sitting in 2 hours of traffic to get home, Mike and I decided to have a cheat meal and order in Takeout from our Favorite Chinese Place. I told him I wanted to have a movie night and I even brought a movie home with me that I wanted to watch.

Our wires got crossed and he thought I wanted him to pick up a movie so we ended up watching this since he rented it.
Not as funny as Bridesmaids, but it was a good mellow movie and one that made you think, there is no such thing as the perfect wedding or the perfect time to get married... (ah-hem Mikey) Its a good Red Box flick...

No You Can't Become The Hulk

So when I started Paleo and this blog I was submerged in the Crossfit world. I bought a groupon deal and it was a way for me to train the crossfit way for a few months at a cheaper rate. While I loved getting my sweat on and PR'ing and doing things I had never done and pushing myself to the limit everyday I had to give up my crossfit love because it just wasn't financially possible.

While I cross fitted I used to get questions like "Are you afraid you will get too big" or comments warning me "not to lift too much I could get hurt" and "not to become big and bulky like most weight lifters.

While I appreciate the concern I am capable of knowing my limit and being smart and knowing when and what to do. Sure there were many times on the Bench press I wanted to surpass my 70lb goal, but I did what I could and tried as hard as my body would allow. I listened to my muscles and worked out smart.

Now to address the "Hulk" Matter, in order for me tobecome a  crazy body builder physique like Chyna from WWE I would have to lift heavy and often with ZERO Cardio and up my caloric intake to an insane amount while also taking steroids and drinking protien drinks and going extreme measures.
I love the Paleo community for taking another look at how exercise and food has changed and how we should all change with it. Yes I miss Crossfit but I still find ways to keep moving. Whether it's running and hiking trails with the dog at the dog park or mowing the lawn in the fastest time ever, moving is moving.

Educated Veiwers! Google It!


*I am a disgruntled broadcasting Undergrad and I am urging you to Google what you hear! Do it now!

So I check the inter-webs for Health articles all the time. I am always looking for what ridiculous studies are being printed, what can I say I crave dumb articles. So here is the article of the moment.

The ArticleDrink THIS to cut your cancer risk
  So there is a new study that is suggesting that Tea can reduce your risk of Cancer. As an avid tea drinker I was happy to see this and so I was excited to see the article and then it all went downhill from there.

If you read the article it says "sipping tea regularly could slash your risk of certain digestive system cancers by up to 29%." So I happily read on, and then it continued to say that drinking it at least three times a week. Then it went on to quote "We can conclude that women who drink tea regularly may have a lower risk of developing some digestive system cancers, particularly colorectal and stomach/esophageal cancer," while I wanted to read the reasons why it never gave me that information, but they did say this...

"And while this study was observational (i.e., lifestyle factors such as diet and exercise were not controlled), and researchers didn't investigate tea temperature, strength, or whether food or supplements containing tea extracts would have similar effects, the study did have implications for the most effective type of cancer-fighting tea, according to Nechuta. "

So  lets recap all this article did was spew stats and give us percentages and then said that there was no real factors that were consistent. So when someone tells you to watch your cholesterol and egg consumption ask them for the stats and ask them to explain the study and then direct them to updated studies and new reports.
Ok onto more important things like Me :) So Last night I rekindled my love with Sauteed Spinach and garlic and I LOVE IT and best of all Mike loved it too... Can you believe it or not but I was the only child EVER that loved Sauteed and creamed Spinach!
So this was last nights dinner! Zucchini "Pasta" with Homemade Meat Sauce and Sauteed Spinach on top. This was great meal. It was super fast and easy. I made a big pot of sauce and froze it, and so I just defrosted it and heated it up cooked up the Zucchini and then sauteed the Spinach. Check out my Recipe Box for the how to make this!

Paleo Check In and General Check Up

Howdy Folks... Who else wanted to just stay in bed on this Rainy Tuesday and wake up just in time for Rachel Ray at 9am and then hang around the house. (Yup that's what this Girl wanted to do )

But I go up and got ready and went to work. As I was finishing my hair and makeup I started to feel wowzy and like I had a headache, so I popped some pills and passed on the coffee and now I am feeling much better.

So back to the Topic at hand. PALEO... I bet your all wondering how I have been doing since I drastically changed my eating habits back in February. Well I am happy to report that I am still on the Paleo "Bandwagon"

Does my food choices look like I am on a diet of any kind? Cookies, cupcakes, and Pizza... yeah sign me up, and I can eat Bacon and eggs and NOT worry about my cholesterol. Which is awesome! Sure I eat off Paleo sometimes but I live by the motto to eat 80% Paleo everyday at least. IF I break down and have a Jersey Bagel I make sure that I eat Paleo for Lunch and Dinner and forgo the dessert. I love the way I eat and I get to eat all of the best foods and not worry. Not to mention that I have learned how to cook more and more meals and I am becoming a little more adventurous.

Food Snob

So I have been thinking a lot about the holidays and how to deal with the comfort foods and temptation. I know that for some having nothing but non Paleo foods can be difficult to sift through, it's hard to know what to eat and what's safe. If you have changed the way you eat you might not want to eat the foods you once did. Some might worry about how they will feel after eating a meal full of gluten and wheat and dairy, or how added sugar will  affect you. Don't worry about making the host feel bad, it's your body and you care what  goes into it. Just make sure you don't offend the host, he/she probably spent a lot of time and money preparing for the party. Here are my tips on how NOT to be a food snob.

Tip 1: ASK
If your close to the host of the dinner party ask what is going to be served and how they are going to prepare  the foods. There is nothing wrong with asking how they are going to prepare there vegetables and once you know that then you can decide what to do from there.

Tip 2: BRING Something
I never go to a party empty handed, whether you bring  a bottle of wine or a dish just bring something. If you know the food is going to be very much NOT PALEO you can bring your own dish and just tell the host that they must taste this famous family dish. If you don't mind indulging a little you can always bring a Paleo dessert with you. Something that is less calorie filled or just knowing that you have something sugar free is always  good option.

Tip 3: Eat Before You Go
If you know that the food is not perfectly Paleo load up on the protein and have a good meal before the party. You can enjoy a few bites of food, but you will feel full and satisfied and be less likely able to over eat.

Tip 4: Host the Party
The best way to control the menu is to be the Host of the party. So if you want a perfectly Paleo party then hold one yourself.

If your having a hard time with the holiday season, if you can't avoid the unhealthy foods just remember these few easy tips...
- If you eat NON Paleo for Dinner eat Paleo for Breakfast and Lunch and Dessert
-If you eat Dessert then Pass on the Alcohol
-Want to sip some Spiked Cider or indulge in a glass of wine or two, skip the dessert.
-Pour out a glass of wine and then pour out half. Trick yourself into thinking your going to have two glasses of wine.
-Drink twice as much water for every alcoholic drink you have. ex. One glass of wine, Two glasses of Water.
