Food for Thought

Chicken Franchise That was dinner last night and it was amazing! Super quick and super easy and yummy! And Healthy!!! Mike hated it... (Insert sarcasm here) he hated it so much he went back for seconds and he would have eaten more had I not stopped him...

What our meals look like this week!!!
Sunday- Chicken Franchise
Monday- Dinner With Friends
Tuesday- Chicken and Brocolli with a poblano pepper sauce. 
Wednesday- Steak Tips.
Thursday- Pizza Caserole with Spaghetti Squash. 
Friday- Buffalo Chicken Meatloaf. 
Saturday- Mikes Choice

Today is the last day of free XM radio which makes me think I need to just suck it up and buy it!!! I was totally rocking out to 90s on 9 today!!!!

Family cuddle time is the best!!!

Snowed In

Today Mother Nature dropped a ton of snow on us... So it became a work from home day which Ace loves. 
While I was watching the news and deciding whether to go into work or not and Ace figured he would trap me so I couldn't leave. Yep I am underneath that pup!
Mike and I made eggs, hashbrowns, and bacon and Mike and I went through a whole pot of coffee. Then I set up shop in 
my favorite room of the house!!!! 
I even built my own fire!!! And I was warm and toasty all day long... With only the heat from the fire I almost got too hot for a little bit. 

After a few hours of work Mike came over to me and told me to close my eyes, then he handed me this...
How sweet! It was a just because gift and I love it!!! He made my day...

After a whole day of working from home we bundled up to clear out the driveway..  Check out my outfit.

All in all it was a pretty good day!!! But I am exhausted!!! How was your snow day?

Super Bowl Pulled Pork

Did you guys watch the Super Bowl? Did you watch the commercials or were you all about the food?

Me to I love the food! The patriots and Cowboys weren't playing so it didn't really matter to me but I am happy that the Seahawks won. 

We ate so much good food! I brought pulled pork to make pulled pork sliders and crab rangoons to go with the make-your-own-sushi! 

I adapted and used a recipe similar to Rachel Rays pulled pork I just made my own adjustments. 

Ingredients:
4lb pork butt cut in half
I bottle of beer 
Vegetable stock
BBQ sauce 
1 onion diced

So first I browned both pieces of pork in a lil olive oil. Then I removed the pork and let it set on the side I quickly sautéed the onions and once they were soft and translucent I added the pork back into the French oven. Then I added a fee good gluggs of beer and a few turns of the pan of vegetable broth. Then I put the lid on my French oven and put it in the oven at 350 degrees. Cook for 2.5 or 3 hours turning halfway through. Then pull the pork with two forks and add BBQ sauce for a saucy pulled pork sandwich or leave it in the beer broth for a simple and flavorful taste!

Easy Weekday StirFry

So I figured I would pop in and show you my eats lately and a quick and easy recipe!
This is a super easy and yummy beef stir fry... 

Ingredients:
1lb Ground Beef
1 Head Baby Broccoli cut into bite size pieces
Udon noodles 
2 tbsp soy sauce 
2 tbsp of stir fry sauce 
Wonton strips for garnish 

Season the beef and the brown it in a pan with a little butter. Transfer Beef to a bowl and add soy sauce to melt into the cooked meat! In the meantime drop the udon noodles in to boiling water and boil for 4 to 5 mins until soft. Sautée and soften your baby broccoli. Drain udon noodles add to pan with broccoli add the beef and stir in stir fry sauce remove from heat and stir to combine. Then serve with a few wonton strips ontop. 

I love this recipe it's super easy and versatile you can add more veggies use rice instead of udon noodles. Or use chicken instead if beef. Its perfect for a quick dinner when you get home late and  want something filling to eat!!!
